Teacher Elaine Rose’s Pumpkin Pie

Elaine Rose
was the 4th grade teacher at Prescott School for many years. She was the 4th grade teacher of
two of Prescott School Missoula’s children.
In 2002, Ms. Rose shared a pumpkin pie recipe with her class during the
holidays. Prescott School Missoula is
glad to be able to share this recipe with all fans of Prescott School.

PIE CRUST
1 1/3 cup
flour
1 tsp
Mix together
these two ingredients
1/3 cup
salad oil
3 Tbsp. cold
milk
Pour into
measuring cup but do not stir together
Pour milk and oil all at once into the flour mixture. Stir with a fork until mixed. Press dough into a smooth ball and flatten
slightly. Roll out dough between 2 pieces
of waxed paper. Peel off paper and fit into pie shell. Flute the edges of the dough.
PUMPKIN PIE FILLING
1 ½ cups mashed
cooked pumpkin
½ tsp.
salt
2 eggs,
beaten
1 Tbsp. pumpkin
pie spice
1½ cups milk
1/3 cup
honey
Pour filling
into pie shell.
Bake in 425
degrees F oven for 15 minutes.
Reduce heat
to 350 degrees F and bake 45 minutes longer.
Let pie
cool. Serve with whipped cream.
